Ingredients

  1. 2 cups oat flour (or 2ÂĽ cups rolled oats, blended)
  2. 3 ripe bananas, mashed
  3. 2 eggs (or flax eggs)
  4. 1/3 cup maple syrup or honey
  5. 1/4 cup melted coconut oil or butter
  6. 1 tsp vanilla extract
  7. 1 tsp baking soda
  8. 1/2 tsp cinnamon
  9. 1/4 tsp salt
  10. Optional: 1/2 cup chocolate chips, walnuts, or blueberries

Instructions

  1. Preheat oven to 350°F. Grease or line a 9×5” loaf pan.
  2. In a bowl, whisk bananas, eggs, syrup, oil, and vanilla.
  3. In another bowl, mix oat flour, baking soda, cinnamon, and salt.
  4. Combine wet and dry mixtures. Fold in extras if using.
  5. Pour into pan and bake 45–50 minutes. Toothpick should come out clean.
  6. Cool 10 minutes in pan, then on wire rack.

Notes

  • Make sure to use certified gluten-free oats if you’re avoiding gluten.
  • Store in an airtight container for up to 5 days or freeze in slices for easy breakfasts.
